A Creative Quesadilla Cookbook: Raising the Bar on Quesadilla Recipes

Over the years, I have found quesadillas to be endlessly fun to eat, whether I want it for breakfast, lunch, dinner, or a snack. This author has turned the simple quesadilla on its head and created some interesting concoctions for our dining pleasure. There is a section on dessert quesadillas that will tempt one's taste buds (SNICKERS or S'MORES QUESADILLAS anyone?).

For vegetarians, here are several to try in this book. I must admit that I'd never thought of several, such as PIERGOI QUESADILLAS. For lunch today, I adapted one of her recipes. She suggested caramelizing the onions on the stove before placing the quesadillas in the oven. Caramelizing the onions made all the difference; they were a real taste sensation.

Please note that there are no photos (other than the cover) and no nutritional info. However, cooking times and servings are listed. I found her directions to be excellent and clear. It is easy to jump from the Table of Contents to individual recipes.
