Looking for some new Tex-Mex recipes for some variety, I opened this book. The author offers some different quesadillas. I like the fact that there is nutritional information offered for each recipe -- calories, fat, carbohydrates, protein, cholesterol, sodium. She also offers the number of servings and how long it will take to prepare (prep, cooking, total time).

I was surprised to find so many vegetarian quesadilla recipes (I don't think of quesadillas as vegetarian, but now I know differently). The author even tosses in a quesadilla that I would consider being dessert (Cinnamon and Apples Quesadillas). What I'd like to mention are the three interesting sauces that I have to try soon -- Quesadilla Jalapeno Spread, Spicy Quesadilla Mayo, and Restaurant-Style Quesadilla Dipping Sauce.

Overall, there aren't that many recipes (but how much can you change a tortilla, beans, and meat?). However, they are enough to get a cook's creativity juices stirred.
