Mark Bittman's Kitchen Matrix is a a great addition to my cookbook collection with inspiration for many meals to come. The recipes and directions can be followed exactly, but the cookbook is perfect for the improvisational cook. It allows dishes to be tailored to suit different tastes and different available ingredients. The beautiful photography in the book makes it a wonderfully visual guide.
