This book has lots of simple to follow recipes categorized by the following TOC: Salads, Soups, Sandwiches, Pasta & Rice, Vegetables & Legumes, Beef & Veal, Seafood & Fish, Lamb, Pork & Ham, & Poultry.

Nutrition analysis (Calories, Cholesterol, Sodium, Saturated Fat, Fat) is given per serving as well as Food Exchanges as per the guidelines of the American Diabetes Association.

The only drawback I have to the book is no pictures of the scrumptious food :)
