This is my go-to resource for the topic of fasting. He categorizes nine different fasts which helps you discern your focus for the fast you desire to do. I have done a combination of a few different fasts. I like Towns because he is grounded in scripture and also balanced in his approach. He recognizes the seriousness of the fast but doesn't come across as totally legalistic. I highly recommend this book.
