If you are a fan of velveeta cheese and quick and easy recipes than this cookbook is for you! None of the recipes take more than an hour's time (including prep & cooking) and the majority of them take 30 min or less. This cookbook is full of fun original recipes including: Dips (the Fiesta Jalapeno & tomato dip and the cheeseburger dip was a huge hit at a get together i had...i had many requests for the recipe and no one could believe how fast and easy they both were to make (only took about 10 minutes including prep time!!) There is also a section called "one pan pleasers" which includes quick and easy one pan dinners. Some of My fave quick recipes:
1) Barbeque chicken pizza (total prep time 15 min total bake time 15 min)
2) 15 minute cheesy chili N rice skillet
3)Twice baked ranch potatoes
4) Spicy Chicken Spagetti (only 5 min prep and then pop it in the oven for 40 min)
I also liked the mexican recipe section. Some faves:
1) Chicken enchilada casserole
2) Speedy Spicy Quesadillas (takes less than 10 min including prep and cook time!)
The book also had a few fun lunch recipes in the "super duper soups & sandwiches" section Some faves:
1)cheesy chicken ranch sandwich
2)Cheeseburger Joe (Like a cheesy sloppy joe)
3)Chunky chicken & rice soup. I also liked the Hearty chili recipe because it took less than an hour (which is pretty fast for chili) to make and it turned out to be pretty tasty (15 min prep and 30 min to cook) and finally i must say if you are a velveeta fan (which you obviously are if you are using this cookbook!) then you cant go wrong with the "ultimate grilled cheese" which I must honestly say is time and again the best grilled cheese I've ever had.
