I love this book. Not only are the recipes simple, but they also come out tasting great. I appreciate a book that is down to earth in its recipes and that uses ingredients I actually have. I am not gourmet -- I just like to eat well. This book really makes simple recipes easy to find. I think it's a "must" for every kitchen.
My copy of this cookbook is tattered from 25 years of use, and I wouldn't give it up. It is still the cookbook I turn to often when looking for economical, socially responsible meals. Great reference for those beginning to cook with less animal protein, but not a vegetarian cookbook by any means. There are directions for simple things like cooking dried beans (something my mother never did, and so I didn't know how to start). Also, great suggestions for using leftovers and substituting with locally available ingredients. I also enjoy the vignettes sprinkled throughout the book on the origins of some of the recipes. This cookbook emphasizes community of family and friends around the table. A wonderful resource that can add to any cookbook collection!
