The author organized the book very well. It is easy to look up the studies that were referenced, the author includes recipes and recommends additional resources. The book is packed with information in an easy to read format. The only downside of the book would be at times it can feel a bit repetitive, but that is understandable since a good diet in any culture will have common threads with other good diets.
