This is a wonderful book to answer some of the "WHY's" of cooking. The recipes are fairly good but more importantly he explains why searing gives more flavor and what brining (and marinades) do. But most importantly it explained to my kids and me how to make good cheap microwave popcorn and why it works (page 236).
