I own over one thousand cookbooks and this is one of my very favorites.
If you can only have one Asian cookbook, this is the one to have. The author I think has lived or knows each of the countries covered in the book. I can say the instructions and pictures help you produce really good tasting food. The recipes I tried were delicious.
I like how she has set up the format for each of the countries. She gives a brief overview of the country and eating habits, a basic "ingredients shelf" and utensils for the cuisine, the list of ingredients for each recipe, and truly enticing photographs of many of the finished dishes. The glossary and substitutions list in the back of the book are very helpful. There is help in translating to American particular words and measurements.
