Ingredients
  • 1 cup - mashed bananas (about 1 1/2 to 2 bananas)
  • 1 cup - mashed sweet potatoes (about 1 potato)
  • 2 - eggs
  • 1/4 cup - melted butter
  • 1 1/2 cups - raisins, crasins and/or currants (soak in hot water for 15 minutes)
  • 1 1/4 cups - sugar
  • 2 cups - flour
  • 1 teaspoon - baking powder
  • 1 teaspoon - baking soda
  • 1/2 teaspoon - salt
  • 2 teaspoon - cinnamon
  • 1 teaspoon - nutmeg
Directions

 

  • 1 cup - mashed bananas (about 1 1/2 to 2 bananas)
  • 1 cup - mashed sweet potatoes, about 1 potato
  • 2 - eggs
  • 1/4 cup - melted butter (these are pretty moist, you could cut this to 2 Tbspf)
  • 1 1/2 cup - rasins, crasins, and/or currants (soaked in hot water for 15 minutes)
  • 1 1/4 cup - sugar
  • 2 cup - flour
  • 1 teaspoon - baking powder
  • 1 teaspoon - baking soda
  • 1/2 teaspoon - salt
  • 2 teaspoon - ground cinnamon
  • 1 teaspoon - ground nutmeg

     

    Preheat oven to 350 degrees F.

    Mix all the wet ingredients in a bowl, and all the dry ingredients in another bowl. Fold the dry ingredients into the wet.

    Spoon into greased standard muffin pans with 6-8 spots, or into mini-muffin pans. Fill each hole to just below the top.

    Bake mini-muffins for 18-20 minutes or standard muffins for about 25-35 minutes until a wooden toothpick comes out clean.

    These measurements make about a gross of mini-muffins. If you're making minis, you will probably want to halve the ingredients.
