Book Review of The Mozza Cookbook: Recipes from Los Angeles's Favorite Italian Restaurant and Pizzeria

This is a well-made cookbook and more, including photos of many of their creations as presented, aimed at those with serious knowledge of fine dining (say $30-$50 traditional Italian meals). Mr. Molina moved on in 2015 but The Mozza has expanded from Hollywood. "The foods we serve and the styles of cooking at Pizzeria Mozza and Osteria Mozza are very different from each other. At the Osteria, the dishes are very involved. Nothing we do is fancy or ornate, but each dish involves several steps and often takes several days, a fair amount of prep, and a lot of detail in terms of the way the dish is finished and presented. it's a more polished restaurant and the food reflects that. The Pizzeria, on the other hand, is very casual. The menu is built around the pizzas, with selections for affettati, or sliced meats; salads, and a large selection of antipasti. The feel of the Pizzeria is convivial and lout--customers who sit at the bar or the pizza counter often end up talking to the people sitting next to them--and the food reflects that."
