Piggy Soup

  • 1 Lb. - Ground Beef
  • 3 Cups - Chopped Cabbage
  • 1 Large - Onion, Chopped
  • 1 28 Oz. - Can Diced Tomatoes with liquid
  • 1/2 Cup - Sugar
  • 1/4 Cup - Cider Vinegar
  • 1 Clove - Garlic, Minced
  • 2 Cups - Tomato Juice or Beef Broth
  • 1 Cup - Cooked White Rice
  • - Salt and Pepper To Taste
  • - Hot Sauce if you like it spicy!

Brown the ground beef making sure to break it up into very small pieces.  Drain.

In a large pot, put the cooked beef and the rest of the ingredients except the rice.  Bring to a boil and reduce and let simmer for 2-3 hours.  Taste and adjust the seasoning.  It should be sweet and sour.  Just before serving, add the cooked rice and bring to a boil.

Serve with rolls and butter.  Great for the winter!  Enjoy!
